INGREDIENTS

• 1 oz Mermaid Zest Gin
  
• 1 oz elderflower liqueur
  
• 1 oz soda water
  
• 4 oz sparkling wine

METHOD

Add lightly bruised mint, elderflower liqueur and Mermaid Zest Gin to a wine glass. Fill with ice, then add soda water and top with sparkling wine. Stir gently. 

GARNISH

Garnish with a lemon wheel and a mint sprig.
