The Founders
The Island & The Dream
Mermaid Gin was born on the Isle of Wight — a UNESCO Biosphere Reserve off England's southern coast. Founded in 2015 by best friends Xavier Baker and Conrad Gauntlett, united by a passion for exceptional spirits and a love for their island home.

The Signature Botanical
Mermaid's Kiss
At the heart of every batch is rock samphire, wild-foraged from the island's shoreline and known locally as Mermaid's Kiss. Collected before dawn to capture the sea mist, the succulent brings a hint of sea air to every spirit we craft.
Step 01
Botanical Foraging
Wild rock samphire is hand-foraged from the Isle of Wight's dramatic coastline — the same cliffs that have inspired island folklore for centuries. Each harvest is carefully timed to capture peak flavour.
Step 02
Maceration
Fresh rock samphire is carefully steeped in English grain spirit, allowing its distinctive coastal oils and aromatics to fully infuse. This patient process captures the essence of the island's shoreline in every drop.
Step 03
Slow Distillation
Using column stills, our distiller makes precise cuts through heads, hearts, and tails. Only the purest heart is kept — a slow, small-batch method that ensures exceptional smoothness.
Step 04
Hand-Finishing
Every bottle is filled, sealed, and inspected by hand on the island. Our iconic recyclable-glass bottles are 100% plastic-free — a commitment to quality and the ocean that inspires us.
